Using the same malt specification as its sister distillery Lagavulin, the key to Caol Ila’s light and flinty style is the low fill level in the stills. Filling to around 33% of capacity allows for significant levels of reflux in the stills, where vapour condenses on the side of the stills and runs back into the bowl to be further purified.
