Anybody seen the wolf?

Sometimes at Wolfburn they have the odd special cask that delivers a distinctively good whisky. Perhaps one that nature has intended to mature in its own special way or a different type of cask. To make sure these whiskies get their own stage to be shared and enjoyed tehy have created The Kylver Series. After Echo and the Bunnymen: The Pogues..

After Echo and the Bunnymen: The Pogues..

The Pogues is the official Irish whiskey of the legendary band. The whisky is made in Skibbereen, in the west of Cork. A blended whiskey that is sweet and intense with notes of malt and cracked nuts. The Pogues was an Irish-English folk/punk band. The band was formed in 1984 and was certainly not without controversy. Unfortunately, the head singer repeatedly lapsed into alcoholism, which led to many gigs being cancelled prematurely.

What did the bourbon say to the almonds?

What did the bourbon say to the almonds?

Am I drunk or are you nuts? Simply put, bourbon is American whiskey made from corn. Written with -ey. The corn, not nuts, gives the bourbon a sweeter taste compared to other whiskeys. This gives bourbon a smoky and caramel-rich taste. But bourbon is subject to a number of strict rules. The following points are important when you can call whiskey bourbon.  Bourbon = 5 conditions     Is made in America     Contains a minimum of 51% corn     Has no ageing minimum. For straight bourbon it is two years     Does not contain other drinks or colourings     Has an alcohol content below 80% in the second distillation of the production process. Bourbon contains 60-70% alcohol

Michel Couvreur, Made in France Whisky?

Michel Couvreur, Made in France Whisky?

Michel Couvreur had a very personal, and truly revolutionary vision of what whisky should be: more than terroir, more than the distiller’s touch, it was the maturing in oak casks that truly helped the grain spirit become whisky. From 1978 on, having settled in the French region of Burgundy, he decided to make it his life’s work and to dedicate his research to a process which he once compared to cross-fertilisation.

If you want more, you go Octomore?

If you want more, you go Octomore?

Octomore single malts have defied received whisky wisdom since they were first distilled in 2002. Sometimes bottled bold and brazen at 5 years old, always super heavily peated and cask strength, every edition is a liquid embodiment of ‘The Impossible Equation’.  Bruihladdich challenged preconceptions of what constitutes quality whisky. In each new set of four they consider the elements that contribute towards the depth and balance of each youthful drop. Is it the sourcing of the raw ingredients? Is it the careful selection of the wood’s quality and style? Or is it in the influence of nature; weather, climate, soil? Polarised opinions… exposure to criticism…the inevitable in the hopes of unlocking new realms of flavour. Those who join in adopting this mindset, that quiet confidence, will receive organoleptic rewards for risks taken.

The first single grain whisky from the House of Suntory Whisky. Nose: Crème brûlée, cardamom, acacia honey, blossoming rose. Taste: Mild and smooth, hint of mint, deep honey. Finish: Clean and clear, spiced oak with subtle bittersweet notes.

The Stillman's Dram

The Stillman's Dram

Fettercairn Distillery was founded in 1824 by Alexander Ramsay, owner of the Fasque estate, who converted a corn mill at Nethermill into a distillery. Situated under the Grampian foothills in the Howe of Mearns, Fettercairn town’s name is loosely based on the phrase "the foot of the mountain".  Fettercairn is owned by Whyte & Mackay Distillers. This old bottling of Fettercairn was part of Whyte & Mackay's now-defunct Stillman's Dram series from about ten years ago.  Distilled by Fettercairn and then matured for 26 years before bottling. At a volume of 45% ABV this whisky is bottled at an optimal drinking strength.

Purity is a rare thing - worth striving for.

Purity is a rare thing - worth striving for.

Each release of Fettercairn single malt whisky showcases a maturation journey that enhances the tropical distillery character derived from our unique copper cooling ring distillation process. The founder, Sir Alexander Ramsay was one of the Scottish landowners who campaigned to license Scotch Whisky distillation. In 1824, he was one of the first to apply for a license, and the Fettercairn distillery was opened. But despite Ramsay’s campaigning for regulation, he was a canny businessman, and he recruited illegal whisky makers to be his first stillmen. He recognised only they had the knowledge and skills he needed. So, from our very beginnings, the have been doing things a little differently in the pursuit of great whisky. This is a beautiful example of an exceptionally refind Scottish whisky.

The start is made with some well-known brands in the pocket: Trois Rivières, Séverin, Montebello and Caraibos fruit juices. In just a few years, the Maison du Rhum has specialised in the development and marketing to the traditional network, with the exclusive distribution of more than 20 brands of rum composed of flavours and origins from all over the world, it is considered a pioneer in the Belgian spirits distribution sector.

More affordable whisky from Campeltown?

More affordable whisky from Campeltown?

In the more affordable category for whiskies from Campbeltown. J & A Mitchell are a whisky company with an incredible pedigree. The family firm have been owner-operators of the legendary Springbank distillery since 1837 and are the parent company of Scotland's oldest independent bottler, Wm. Cadenhead. Through these channels alone, their output is nothing short of reverential, and this is before you even consider the casks they sold to independent companies like Samaroli through their R.W. Duthie arm, and to Japan via their Eaglesome company's Kingsbury brands. Many if not all of these are legendary. The company now owns a second distillery in Campbeltown, Glengyle, which is the home of Kilkerran single malt. This is a blended Scotch, likely containing a proportion of Springbank single malt, and bottled using the company's trademark "parchment" style labels of the 1990s.
