Waterford Sheestown Edition 1.1. forms part of the brand's Single Farm Origin series, in which barley from a single local farm in the vicinity of the distillery is used to make whiskey. In the case of the Sheestown 1.1, it is Irina barley that grows in a relatively dry, clayey soil, forming the basis of a very interesting single malt whisky. After distillation, a combination of American and French oak was chosen to mature for a period of 4 years. In 2020, 9,000 bottles were bottled at 50% alcohol.
Hints of herbs surrounded by a touch of grass open in the nose, which develops over time into fine fruity and slightly sweet influences. Fresh, fruity, floral and sweet, this whisky combines it all. Rich chocolate flavours open on the palate surrounded by a hint of cinnamon. Wood, dried fruit, cocoa and fudge follow. The finish is long and full with hints of sweetness and spice.
